The story:
Our partners at Spojka went to Sumatra, Indonesia for this one, working with Simalem Specialty Coffee and its smallholder farmers. The cherries went through anaerobic co-fermentation with osmanthus flowers, letting the blossoms infuse the beans during fermentation. It's an unusual move for Sumatra, a region better known for heavy, earthy cups than delicate florals.

The taste:
Apricot and pear lead, layered with honey sweetness and a tea-like structure that keeps the whole thing clean. It's elegant rather than funky, floral without tipping into perfume. Nothing here tastes like the Sumatra you're used to.

The feeling:
Pull it as espresso to concentrate that honeyed floral character, or brew it through an AeroPress for something lighter and more tea-like. Either way, it's a coffee for people who like being surprised by their cup.
