Chemex Quick Start Guide: How to Brew with the World’s Most Beautiful Coffee Maker

Let’s admit it: You bought the Chemex because it looks cool.

It’s the only coffee maker that is permanently displayed in the Museum of Modern Art in New York. It looks like something a chic chemist would use. It makes you feel sophisticated just holding it.

But the Chemex isn't just eye candy. It produces a cup of coffee that is distinctly different from anything else. It’s ultra-clean, tea-like, and delicate.

The secret isn't the glass; it’s the paper. Chemex filters are 20–30% thicker than standard filters. They block almost all the oils and sediment, leaving you with nothing but pure flavor clarity.

The Gear List

  1. A Chemex: (Obviously).
  2. Chemex Bonded Filters: You cannot use standard V60 filters here; they will fall in.
  3. Medium-Coarse Coffee: Think Kosher Salt. Coarser than a V60, finer than a French Press.
  4. Scale & Kettle.

The Recipe: The 2-Cup Standard

  • Coffee: 30 grams
  • Water: 500 grams (Total brew time: 4:00–5:00 minutes).

Step 1: The Fold & The Placement (Crucial!)

Open your filter. You’ll notice it makes a cone.

  • The Rule: Place the filter so the side with 3 layers is facing the spout.
  • Why? If you put the single layer against the spout, the wet paper will suction into the glass, blocking the air channel. If air can't get out, coffee can't get down. Your brew will stall.

Step 2: The Rinse

Pour lots of hot water through the filter to stick it to the glass and warm the vessel. Dump the water out. (Don't forget this. Diluted coffee is sad coffee).

Step 3: The Bloom

Add your 30g of coffee. Shake it flat. Start your timer and pour about 60g of water (double the weight of the coffee). Let it bubble for 45 seconds. The thick filter slows things down, so give it time to soak.

Step 4: The Slow Pour

Pour in a slow, steady stream in the center. Because the filter is thick, the flow rate is slow. You don't need to be as careful as with a V60.

  • Pulse it: Pour up to 300g. Let it drain a bit. Then pour the rest up to 500g.
  • Avoid the walls: Keep the water on the coffee.

Step 5: The Lift (Optional)

If the flow stops completely, you might have "vapor locked" it. Gently lift the filter up a tiny bit to let air escape from the bottom chamber. It should start flowing again.

Step 6: Serve

Remove the filter. Give the Chemex a swirl. (Since the bottom brewed first and is stronger, swirling mixes the coffee for an even taste). Pour and enjoy.

The Verdict

The Chemex is a slow brewer. It’s not for the rush out the door. It’s for the Sunday morning ritual where you want to taste every floral note in that Geisha bean.
