Bartek is the calm in the storm, the meticulous planner, the architect of organization. For years, the idea of creating a specialty coffee business was a carefully nurtured seed in his mind, meticulously planned and researched. A true connoisseur of life's finer, well-crafted things—from baking artisanal bread to preparing the perfect meal—Bartek brings a methodical approach to sourcing and quality control. When he’s not behind the scenes organizing the future of Holy Sip, you’ll find him carving fresh powder on his skis.

Bartek's Holy Sip: A ritual of precision. For his daily filter, he chooses the vibrant notes of HAYB’s "Się Przelewa Owoc", brewed in a Hario V60 Ceramic to highlight its bright citrus acidity. For a bold, rich espresso, he turns to Coffee & Sons’ "Słodki Shot", savoring its deep caramel and cocoa profile.

Emil is Bartek’s total contrast: spontaneous, high-octane, and a man of action rather than just talk. If Bartek plans, Emil executes—fast. He thrives on the adrenaline rush of extreme sports, the energy of loud music, and the roar of a motor. Emil is pure kinetic energy, bringing the drive, the speed, and the "let's just do it" attitude that pushes a great idea into reality. When the snow falls, you'll find him hitting the slopes on his snowboard.

Emil's Holy Sip: High-energy days demand high-impact flavor. Emil is currently fueled by the Rwanda Nyamurinda Red Bourbon, a bean packed with complex, juicy fruit notes that truly pop. While the AeroPress is his long-time sidekick, he’s lately obsessed with the Clever Dripper for its simple, versatile, and consistently killer results.

Despite our wildly different approaches to life, our shared ground is solid. We're both deeply involved in the world of IT, we challenge ourselves with climbing, and we share a love for mountain escapes. But above all, it's our unwavering love for specialty coffee that brought us here. 


From a Mountain Trip to a Business Plan

Relatively early in our friendship, we decided to take a risk: a week-long, 24/7 trip to the Italian Dolomites for our shared passion—the mountains, skiing, snowboarding (and, of course, incredible Italian food). We barely knew each other, but from the moment we started the long drive, we clicked. The trip cemented our bond, on the long drive home, Bartek finally shared the specialty coffee idea he'd been developing for so long: a store curating the best premium European beans.

What followed was an hours-long, idea-bouncing discussion about how to bring this vision to life. Finally, Emil, true to form, cut the planning short and declared: "Let's do it! We hit the ground running as soon as we get back and crush this idea." In that moment, on the drive home from Italy, Bartek’s meticulously planned concept was injected with Emil’s explosive drive, turning a dream into an immediate action plan.
