The story:
Our partners at Gringo Nordic have worked with the Magaña family in Apaneca, El Salvador since the start, and this is the first honey lot from their five-year-old Pacamara trees at San Andres. Grown at 1470m MASL and dried on raised beds under shade nets, this tiny 490 kg lot comes from the spring 2025 harvest.
The taste:
Sweet citrus meets ripe stone fruit, with a strawberry whisper and a dried fig depth. The honey process leaves the sugar coat on the bean, and a light fermentation during drying adds subtle fermented notes that make the orange and stone fruit pop. It is elegant, sweet and juicy, and it keeps you reaching for another sip.
The feeling:
Brew it on a V60 if you want the citrus sparkling and clean, or in a Clever Dripper for a rounder, sweeter cup. A Chemex works too when you are sharing with friends. Take it slow on a weekend morning, no milk, and let the strawberry and orange sweetness unfold as the cup cools down.
