The story:
Our partners at DAK have kept coming back to Milky Cake since 2021, and one sip explains why. This Castillo grows at 1920 MASL on Finca El Paraíso in Cauca, Colombia, and goes through an advanced fermentation protocol, an anaerobic washed process developed with their sourcing partners at Cata Export. It is one of the most engineered coffees in the DAK line-up and a proper bestseller.

The taste:
Picture a warm slice of vanilla cake topped with crushed pistachio, with a pinch of cardamom drifting through the crumb. A thread of honey runs underneath and the cup stays creamy, soft and unapologetically sweet. Acidity sits low, so the sugar leads from the first sip to the last, and the finish lingers like fresh frosting.
