Our partners at Spojka sourced this washed beauty from the high-altitude La Roma region in Colombia. These beans enjoyed a controlled 24-hour mucilage soak before sunning on patios for up to 25 days. We selected this light roast because that extra patience results in a structured, crystal-clean cup profile with an 84.75 SCA score.
