The story:
Burundi has quietly become one of the most interesting origins on the map, and lots like this one explain why. Grown in Kayanza at 1700 MASL, this is Red Bourbon, a variety that has been in the region for generations and rewards anyone willing to process it properly. The washed treatment here is meticulous, and it shows in how clean the cup drinks.

The taste:
Bright without ever turning sour. Dried peach arrives first, carried by a lifted acidity, then delicate white flowers come through the middle. A thread of honey runs underneath the whole thing and softens the finish. Crisp, floral, and remarkably composed.

The feeling:
Reach for a Kalita Wave. The flat bed keeps extraction even and stops that brightness from tipping over into sharpness. It is the cup that makes a grey Tuesday feel briefly like spring, which is worth something in this country.
