The story:
Our partners at La Cabra scored this washed beauty from the Rutas del Inca cooperative in Cajamarca, Peru. After nearly folding during the 2020 supply chain chaos, a hardcore group of local farmers saved the coop by securing NGO backing for smart agroforestry. Grown under native shade trees at a rock-solid 2000 masl (with some farms pushing up to 2400), these Caturra & Catuai seeds are dense, sugar-packed survivors.
The taste:
This cup hits your palate like a freshly squeezed citrus explosion. It kicks off with a high-voltage acidity that completely electrifies your tongue with sharp notes of orange and lemon. Before it turns into a pure sour-bomb, a deep, comforting wave of chewy dried apricot sweetness sweeps in, locking the profile into a brilliantly transparent, light, and delicate finish.
The feeling:
This is engineered for the "bright and light" filter purists who want zero heavy baggage in their morning cup. As an omniroast, it makes for a laser-focused filter brew that tastes like an artisan fruit infusion, or a ridiculously zesty espresso shot that will snap your brain awake instantly. Keep it black and let the acidity do the heavy lifting.
