The story:
We didn’t just stumble onto this seasonal banger; we begged our partners at La Cabra to secure a serious volume of it. The problem with elite Pink Bourbon from San Agustín is that smallholder plots usually produce just a handful of bags. Enter the Monkaaba project - run by producers, for producers. Founders Esnaider and Didier combined the harvest of their top 9 local farmers at a solid 1800 masl sweet spot, paying them a massive 3.7 million pesos per carga. That is over a million pesos above the FNC market rate, proving that keeping things collective pays off.
The taste:

Because it’s a meticulously washed lot, the texture stays brilliantly juicy and balanced, letting the natural sweetness of the Pink Bourbon variety take center stage without any muddy processing noise.
