The story:
Pastor is our partners at Heresy's universal blend, built to work for everyone no matter which brewing method they reach for. It scored 86 points with the SCA and was designed from the start as an omniroast with one clear job: taste reliably good, shot after shot, cup after cup, without asking you to think too hard about it.

The taste:
Deep chocolate and warm caramel dominate the cup from the first sip through the last, with low acidity keeping everything smooth rather than sharp. The body runs full, which makes it forgiving of a rough grind or an inconsistent pour, so it stays easy to love even on your worst mornings.

The feeling:
Pull it as espresso for a full, chocolatey shot with real body behind it, or brew it through a Kalita Wave for something gentler but just as satisfying. Either way it lands in the same easy, chocolate-and-caramel place, just at a different strength depending on your mood. A safe pick when you don't want to think about it.

About the roastery

Heresy is a turbo nano roastery out of Poland, and they've got opinions. Since 2021 they've only roasted microlots scoring 86 points or higher, because life's too short for boring coffee. Founding roaster Piotr Jeżewski is a Q Grader trained by a World Champion, and the rest of the crew has judged national championships and run PR for some of Poland's biggest coffee names. No fussy tasting wheels, no gatekeeping, just small batches in brown jars they'd actually want to drink themselves.
