The story:
Grown in Cauca, Colombia at 2200 MASL, this lot comes from smallholder farms around the El Tambo microregion, an area our partners at Heresy have been buying from for a few seasons now. It went through a full natural process, drying on the cherry for extra sweetness, and scored 87 points with the SCA on this batch.

The taste:
Chocolate and forest fruits open together right from the first sip, with delicate flowers and citrus weaving through the middle before things settle into a rounder finish. It is a complex cup that keeps shifting a little with every sip, never landing on just one note for too long. This is a coffee for people who like to think about what they're drinking.

The feeling:
Brew it slow in an AeroPress and let each layer show up one at a time instead of all at once. A finer grind and a longer steep pull out more of the forest fruit, while a coarser, quicker brew leans harder into the chocolate side, so experiment a little before settling on your ratio.

About the roastery

Heresy is a turbo nano roastery out of Poland, and they've got opinions. Since 2021 they've only roasted microlots scoring 86 points or higher, because life's too short for boring coffee. Founding roaster Piotr Jeżewski is a Q Grader trained by a World Champion, and the rest of the crew has judged national championships and run PR for some of Poland's biggest coffee names. No fussy tasting wheels, no gatekeeping, just small batches in brown jars they'd actually want to drink themselves.
