    The story:
    Our partners at HAYB built this one as a summer blend, mixing a classic washed lot from Caldas/Tolima, Colombia with a strawberry co-fermented lot from the same region. Both components are Caturra and Caturra/Castillo, grown between 2000 and 2100 meters. An 88 score backs up the fermentation work behind that strawberry half.

    The taste:
    Ripe strawberry runs straight through the cup, backed by orange brightness and a toffee sweetness that rounds out the finish. It reads more like a summer drink than a classic Colombian filter coffee, playful and a little candy-like without losing its structure. The washed half keeps things clean, while the co-fermented half brings all the fun.

    The feeling:
    Brew it through a V60 for a clean, juicy cup, or run it cold as iced coffee on a hot afternoon. It also plays nicely with milk, leaning into that milkshake character HAYB keeps mentioning. This isn't a coffee built to wake you up. It's built for lazy afternoons, sunshine, and sipping slowly without any particular urgency.
