The story:
Our partners at DAK sent their own team member straight back to Sidama Bensa for a third consecutive year to play mad scientist. This wild lot of Local Landraces comes from Gatta Farm, growing at a bruising 2120–2200 masl. By running a yeast-assisted semi-anaerobic natural fermentation, they’ve managed to weaponize the sugars inside the cherry, pushing Ethiopian processing way past its traditional limits.

The taste:
This cup hits your palate like a warm, concentrated spoonful of stewed strawberries. The fermentation gives it a thick, silky body with a highly sophisticated, subtle boozy nuance that stays completely elegant. It’s balanced out by fuzzy apricot skin and a heavy, melting base of brown sugar that keeps the entire profile deeply sweet and wildly expressive.
