The story:
Macaron is one of those coffees our partners at DAK are always excited to bring back. It comes from brothers Johan and Diego Vergara at Finca Las Flores in Pitalito, Huila, Colombia, where a Red Bourbon grown at 1750 MASL goes through an advanced anaerobic natural process with thermal shocks, submerged fermentation, oxidation and controlled drying. Only cherries between 24 and 28° Brix make the cut.
The taste:
This cup is a total dessert heist. It slams your palate with a massive, sticky dollop of strawberry jam and the distinct, almond-sweet crunch of a raspberry macaron. Just when you think your teeth might melt, a ridiculously rich wave of velvety buttercream finishes the job. It is thick, unashamedly sweet, and has a heavy, coating mouthfeel that makes regular filter coffee feel like plain water.
The feeling:
This is explicitly for the "I want my cup to taste like a liquid pastry shop" rebel who lives for high-octane flavor. If you are a strict purist who gets offended by fruit-forward intensity and crazy sweetness, look away. But if you want your filter coffee to cross the line into total decadence, brew this in your pour-over immediately before these scarce bags vanish.
