The story:
Our partners at Coffee Collective sourced this washed lot from René Ccasa, a farmer in the Pacaybamba sector of Cusco, Peru who also serves as the local pastor. He's part of a new generation of producers pushing into specialty coffee, and is currently reforesting land that used to grow corn to secure the area's coffee production for years to come. The SL9 trees here grow at 2210 masl.

The taste:
Sweet and refreshing, with ripe peach and bright citrus running through a backbone of elderflower. It's a lighter-bodied cup than a classic washed Kenyan, with the acidity doing more of the work than the sweetness, though the two stay close enough that nothing feels sharp. Clean, juicy, and easy to drink black, cup after cup.

The feeling:
Best through a V60 for a crisp, clear cup, or a Chemex if you want the citrus rounded off slightly. It works well as a slow solo pour or alongside something light for breakfast, and it's a good one for anyone who wants their morning filter coffee to taste more like fresh fruit than like coffee at all, no milk needed.
