Our partners at Coffee Collective tracked down this heavy-hitting natural lot from Daterra, the mad-scientist mega-estate in Cerrado, Brazil. Managed by Luis N. Pascoal at a textbook regional altitude of 900-1200 masl, Daterra is basically a high-tech agronomic lab disguised as a coffee farm. They blended three heavy-yielding, sugar-dense varieties—Yellow Catuai, Arara, and Paraiso—and gave them a precision medium roast that aggressively locks in the structural sugars before any volatile acidity can creep into the bean.
