The story:
Our partners at Coffee Collective sourced this washed lot from Jhonathan Gasca, a fourth-generation farmer in Huila, Colombia. His farm runs on agroforestry principles, with organic fertilisers and even beekeeping worked into the land, plus three hectares left as untouched forest reserve. Grown at 1850 masl, the cherries go through a three-stage fermentation that finishes with 40 hours anaerobic before drying.

The taste:
Bright and juicy up front, with chocolate and caramel rounding out a backbone of ripe blackberries. The long anaerobic step pulls out real sweetness without pushing the cup into wine territory, so it stays balanced rather than showy. Expect a silky texture and a finish that lingers well past the last sip.

The feeling:
Run it through a V60 or Chemex if you want the fruit to lead, or a Clever Dripper for a rounder, sweeter cup with less clarity. It works equally well solo in the morning or stretched into a milky flat white, whenever you feel like something bright but not sharp. A good pick for anyone easing into washed Colombian coffee for the first time.
