The story:
Grown on the Nestor Lasso Estate in Huila, Colombia at 1750 MASL, this lot blends Castillo and Caturra through an anaerobic washed process, where the cherries ferment in sealed tanks before pulping for extra sweetness. Our partners at Tanat picked it as an espresso lot specifically for the syrupy body that process tends to produce.

The taste:
Warm caramel leads the shot from the first second, backed by dried apricot and a soft peach sweetness that carries through the middle and finish. The body runs full and syrupy, coating the whole mouth, and the fermentation shows up as extra depth rather than funk, which keeps things approachable. This is a crowd-pleasing shot, not an acquired taste.

The feeling:
Pull it as a straight shot for maximum caramel intensity, or stretch it into a flat white where the apricot sweetness really comes through against the milk. Either way, the syrupy body holds up, so it never thins out or disappears under steamed milk the way lighter lots sometimes do. A solid daily espresso pick.

Tanat is a specialty coffee roastery from Paris, and its founder can back up the hype: Alexis Gagnaire is a former competitive barista who's podiumed at both the AeroPress Championship and the French Coffee Roasting Championship.
