The story:
Illuminati blends coffee from Cauca, Colombia and Santa Barbara, Honduras, grown between 1600 and 2050 MASL. Our partners at Heresy ran the two through washed and fermented honey processes and built the blend in the American style on purpose, fruit-forward rather than dark and heavy, which is a deliberate break from the usual espresso playbook.

The taste:
Caramel and chocolate form the base of the shot, but forest fruit jam and dried fruit push through with real intensity, refusing to sit quietly in the background. It is louder and more fruit-driven than a classic espresso blend, built for people who find dark roasts a little one-note. This one has something to say.

The feeling:
Pull it as a straight shot to taste the fruit come through clearly, or stretch it into a cortado where the caramel takes the lead against the milk. Both directions work, so it comes down to whether you want the fruit or the sweetness in front on any given morning. A bold choice for people bored of the usual.

About the roastery

Heresy is a turbo nano roastery out of Poland, and they've got opinions. Since 2021 they've only roasted microlots scoring 86 points or higher, because life's too short for boring coffee. Founding roaster Piotr Jeżewski is a Q Grader trained by a World Champion, and the rest of the crew has judged national championships and run PR for some of Poland's biggest coffee names. No fussy tasting wheels, no gatekeeping, just small batches in brown jars they'd actually want to drink themselves.
