The story:
A strictly limited, micro-lot treasure from HAYB. This exquisite light roast brings together pure Heirloom varieties grown at a dizzying 1900–2100 MASL in the famous Sidama region of Ethiopia. Fully Washed to polish away any heavy or earthy notes, this elegant lot scored an outstanding 87 SCA for its pristine, crystal-clear structure.
The taste:
Pure liquid elegance. The cup opens with a sophisticated, highly defined base of black tea, followed by the crisp, juicy sweetness of a fresh Red apple. As it begins to cool, a smooth, warm finish of aromatic vanilla sweeps in to tie the flavor profile together beautifully. It is clean, refined, and beautifully light.
The feeling:
This is a magnificent Chemex playground. The thick filtration of a Chemex acts like a prism, separating the delicate black tea layout and apple crispness without letting any muddy texture disrupt the experience. If you love tea-like complexity and soft, high-altitude elegance, this limited Ethiopian masterpiece is a must-try.
