dak-mango-tango-filter
DAK Coffee Roasters - Mango Tango - Filter - 250g

The story:
Our partners at DAK keep returning to Danche Washing Station in Chelbesa, Gedeb, and this lot shows why. Around 400 smallholders farm between 2000 and 2300 MASL, and Mango Tango is a natural processed Ethiopian heirloom grown near 2200 MASL. The whole cherries are dried with care and the result stays remarkably clean for such a fruity coffee.

The taste:
Ripe mango takes the lead, followed by a rush of strawberry candy and a zesty twist of mandarin. It is tropical and sweet but beautifully defined, with a juicy acidity that keeps everything sparkling. The finish is clean, bright and a little confectionery, like a fruit sorbet that somehow found its way into your filter.

The feeling:
Make it in a V60 or AeroPress and keep agitation gentle, as Ethiopian beans like a softer touch. This is for the fruit lover who wants tropical flavour without any muddiness. If you prefer roasty and nutty, skip it. If you want summer in a cup any time of year, brew it.
